Key Lime Pie

I don't know that I've met anyone who doesn't enjoy key lime pie. It's tart and sweet, smooth with a textured crust, and it is so easy to make! But when I had THIS version of key lime pie, I knew that it was the ultimate version. Instead of a traditional graham cracker crust, this recipe uses gingersnaps and toasted coconut to add a bit of a bite from the ginger and takes you to a tropical island with the coconut.
I do think that toppings matter with this pie! After it fully cools, I add extra crushed gingersnap crumbs and toasted coconut in a thin layer around the outside of the filling. The real clincher is the homemade whipped cream. I add heavy cream, vanilla powder, and a tiny pinch of salt to a bowl. Whip that until starting to firm up, and then add just a little powdered sugar and keep whipping - we don't want it too sweet! The whipped cream on top of the pie helps cut through the tart filling so I would say don't skip it!

This recipe is so simple, but packs a punch of flavor. I love that it's the perfect dish for a potluck and is a taste of summer any time of year!
