Did you know it's currently citrus season in Florida and Texas? One of my favorite winter activities when living in Central Florida was heading to the Winter Park Farmers Market or Pell's Citrus and Nursery to pick up some fresh oranges and grapefruits. If it had been a little cold - or, cold for Florida we should say - it was even better because it made the fruit sweeter! I really love any and all citrus. I always joke that my perfect perfume would just make me smell like a grapefruit - ha! So it was natural for me to envision a citrus salsa when brainstorming a delicious taco for Meatless Monday. I love blood oranges / red navels for this because they're less tangy than a typical orange, but if you can't find them then you can sub for any type of orange or tangerine.


If you've never had halloumi it is essentially a block of firm, salty cheese that absolutely shines when pan "fried". I never use oil though, so it doesn't get greasy - just crispy and golden. I find I can usually find it at Publix, Trader Joes, or Aldi. I stock up on it when I find it and then freeze it. That way I always have delicious cheese to use as a protein in meals!

This saltiness of the crispy cheese, the spiciness of the chipotle crema, the tart acid from the oranges, and the creaminess of the avocado makes for a delicious and bright taco. A perfect pick-me-up in a gray and cold January!
