Sweet Potato Gnocchi with Brown Butter Sauce

Autumn is absolutely my favorite time of year, and much of that comes from the amazing flavors of seasonal produce during these cool months. Winter squashes, hearty stews, cozy spices - I love it all! This recipe is one of my favorites because while it looks long, once you get the hang of it, it's actually quite simple! Plus you can freeze the dough very easily and pull it out any time you want a comforting meal.
Something about the crispy sage just does it for me, and is absolutely perfect with the pillowy sweet potato gnocchi. The brown butter is nutty and infused with sage flavor and topping it with prosciutto it is a great salty addition.
I do know that Trader Joes makes their own sweet potato gnocchi and that is a great shortcut - the sage and brown butter are great compliments to sweet potato or pumpkin in any form! Just skip to Step 6 in the recipe below. That said, this is a fairly easy to make recipe and feels impressive once you sit down with your delicious dinner. Give it a try!
