PB&J Cobbler

Early when Ken & I started dating, he found out that I hadn't had a peanut butter and jelly sandwich since I was probably in kindergarten. I just didn't like them as a kid! Since they're one of his favorite foods he insisted I try one again. Of course I had to take it above and beyond, so I created a PB&J score card and proceeded to make us 8 sandwiches. We used smooth and crunchy peanut butter, and then used strawberry, raspberry, grape, and apricot jam to compliment the peanut butter. After all was said and done we both preferred the crunchy peanut butter but he liked the raspberry jam (it must have seeds!) and I liked the apricot.


For this recipe I combined our favorite jam flavors - raspberry and apricot. In my mind, this is the perfect way to use up the last of the summer fruits and toast to a new school year (because I'm fairly certain every kid except for me ate some version of pb&j in their packed lunch!). You can sub raspberries for any kind of berry - pick your favorite! The "crust" on this cobbler is akin to a peanut butter cookie, and I added oats to bulk it up some. The chopped peanuts are a bonus, but the crunch they provide is delectable. I serve this cobbler with homemade whip cream, but vanilla ice cream is always a classic too.!

A true winner. I’m a huge fan of peanut butter based desserts but this one is at the top of the list!
